Can someone explain the numbers that people throw around when they say…." I was pulling a 53/19 up that hill"..

I realize that these numbers correspond to the crank (probably the wrong term, but work with me here) and the cassette, but don’t know much else. Also, I have noticed that most racing bikes have 2 rings on the crank, and I have 3.
